You will love this Stuffed Cabbage Soup! It is a hearty twist on a cherished childhood recipe that is easy, delicious, and perfect for cozy days at home!

Stuffed cabbage is one of those foods that instantly takes me back to my childhood. One bite, and I am transported back to that blue-formica-topped kitchen counter watching Mom carefully roll the meat filling in the cabbage leaves.

Oddly enough, even as a child, this was one of my favorite meals, but then again I was also known to turn down a bowl of ice cream for a bowl of collard greens.

When I started seeing tons of Stuffed Cabbage soup recipes pop up, I thought… “I need to do that to Mom’s recipe.” So I did! Not only is this amazingly delicious, but it’s SO much easier than the original while still maintaining all that great flavor! Think of this like an unstuffed cabbage roll soup.

Tips for Perfect Cabbage Soup:

Add juice for a thinner soup! This recipe makes a thick soup. It’s really more stew-like. So, if you want a thinner soup, just add some more vegetable juice.

I use V8! The vegetable juice that I reference in this recipe is the V8 brand. You could really use any alternative brand, but V8 is just my preference. You can use the low sodium or spicy versions as well.

Salt to taste! Feel comfortable being generous with the salt on this one.It takes a lot to get it where it needs to be. I didn’t put a specific amount though because varying juices have various amounts of sodium, and I didn’t want you to end up with something that was too salty. Don’t ever be afraid to taste your food. That’s what adding salt and pepper to taste means.

Should the cup of rice in this cabbage soup recipe be cooked or uncooked?

I do not recommend cooking the rice before you add it to this soup. If you do that, you run the risk of your rice getting mushy and gross. And, no one wants mushy rice in this delicious bowl of goodness!

Can you substitute brown rice in this cabbage soup?

You absolutely can substitute brown rice for white rice in this cabbage soup. However, you might need to slightly adjust the cook time. It generally requires a longer cook time, so just make sure you give it plenty of time to cook up.

If you are looking for a healthy alternative, you could also substitute cauliflower rice. I recommend adding that particular rice in towards the very end of your cook time.

Can you freeze cabbage soup or reheat leftovers?

This soup recipe makes for great leftovers!In fact, Imight actually prefer it the second day after all those flavors have time to get happy. You can store in it the refrigerator for up to 3-4 days. It also stores well in the freezer for up to 3 months.

Ingredients

  • 1 1/2 pounds ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 (28-ounce) can petite diced tomatoes, undrained
  • 3 cups vegetable juice (like V8)
  • 3 cups beef broth
  • 1 cup rice
  • 1 medium head cabbage cored and chopped
  • salt
  • pepper

Instructions

  • In a large stock pot or very large dutch oven, brown the ground beef over medium-high heat. Once it starts to brown, add the chopped onion and cook until the beef is no longer pink. Drain the grease way.

  • Return the meat and onion to the pot over medium heat. Stir in the garlic and cook about 1 minute. Add the undrained tomatoes, vegetable juice, and beef broth. Bring to a boil then stir in the rice. Reduce the heat to a simmer and add the cabbage. Stir well.

  • Cook, covered, for 20 to 30 minutes, stirring occasionally, until the cabbage is tender and the rice is fully cooked. Generously add salt and pepper to taste. Add additional vegetable juice if you'd like a thinner soup.

      Cindy, I agree. Seems to take forever to cook rice in a crockpot. Maybe use minute rice instead, or even use precooked rice and add it in last 30 to 60 min. just a thought.

      Yes! I think the best bet, after some further testing, is to add cooked rice in the last 30 minutes if you go with the slow cooker method.

      I think leaving the rice out or adding the potatoes would certainly work. However, I think you might need a little more liquid if you add the potatoes.

    You say for the crockpot: “I’d cook it on low for 4 hours or high for 6 hours and wait until the last hour to add in your rice.” I don’t think you mean that.
    Also, you said in the email that there is a secret ingredient – well, you’re right it is very secret. I have no idea which ingredient is secret.

      You’re correct, I don’t mean that. I just got the numbers transposed. After further testing, however, I can’t produce a consistent result in the slow cooker, so I’ve removed that suggestion.

      As for the secret ingredient, it’s the V8 juice. It adds so much flavor.

    **Can you make cabbage soup in the crockpot?
    I don’t see why not! Simply brown your ground beef before you combine it with all the other ingredients in the crock pot! I’d cook it on low for 4 hours or high for 6 hours and wait until the last hour to add in your rice**
    Usually crockpot cooking on high is the shorter time and low the longer time. Am I misunderstanding the directions?

      No misunderstanding, I just simply transposed the cook times. So sorry. After further testing, however, I can’t produce a consistent result in the slow cooker, so I’ve removed that suggestion.

    I did add additional salt, but other than that, I used the ingredients listed. It tasted wonderful! I was concerned about my husband liking it as much as I did, but he loved it as well.

    extra touches to mirror my golomky recipe are some green pepper, skip the v-8 juice and put in a can of tomato soup, along with 1.5 ibs of ground beef put in 1/2 lb of Italian sausage and 1/2 lb of ground venison

    Tried this last night and it was better than I thought it would be. It was awesome. So much easier than rolling the cabbage but even tasted better. Added a little sugar at the end and it really brought out the flavors.

    I almost always use minute rice when making a dish like this, but didnt this time, my rice is still stiff, ughhh, think Ill use minute rice next time

      You can always add a little more liquid and cook longer if you have trouble. I’ve not had that issue with this one. However, minute or instant rice will also work.

    Holey moley! This is so good that I have even eaten it for Breakfast this morning. And lunch of course…and then dinner because it tasted so good the first two times. I must have needed some veggies in my diet! The V8 seems to add a lot of depth. I think I’m going to start adding to other recipes that call for tomatoes. Thanks again for sharing this great variation on cabbage rolls!

    Tried this, was good but turned out very thick, more like a stew than a soup. I would recommend adding the cabbage first, as the inner thicker parts of the cabbage were a bit under done when made according to recipe. Overall great flavor, my wife adds a package of brown gravy mix to her stuffed cabbage as well, which I did add to this soup. It adds another dimension of flavor that is closer to our family stuffed cabbage recipe. Overall well done, will make again and thank you!

    Yum! I loved reading the part of your post where you talked about being a “strange kid” and preferring a bowl of collard greens to a bowl of ice cream. I laughed because as a kid I was the exact same way (and still am). To this day I prefer collards to ice cream. My mother, a chocoholic, does not understand my aversion to chocolate, lol.

    Another thing I love about this post is that it’s a cabbage soup. My mom has always made a cabbage & kielbasa soup, which I love. So cabbage soup is a comfort food for me since I enjoyed it as a child. From one veggie-loving recipe addict and writer to another, I’d be happy to share the recipe if you want 🙂

    Made this today! Love it! It’s actually like a stew, unless you add some extra beef stock and V-8 juice! Live it thick, so no problem for me. I also added a few extra seasonings, oregano and time…just my taste. You really can’t go wrong with anything!
