I love eggs. They are such a simple thing to make in so many ways — even in the microwave. Did you know you could make fluffy scrambled eggs right in the microwave?

I’m currently nursing a toddler who is deathly allergic to eggs. She’s so allergic to eggs we have to keep an Epi-Pen nearby at all times. Unfortunately, if I eat eggs, she still has a reaction to them. So, until she weans, it’s no eggs for me.

Sometimes I dream of making a quick batch of eggs in the morning. As soon as she weans, I’m probably going to eat a plateful of eggs. I can’t wait!

How do you make Scrambled Eggs in a Mug?

One thing you can make in a mug in a microwave in less than 2 minutes is some delicious scrambled eggs. You can even add a few ingredients and make them taste just like a cheesy or a veggie omelet in no time.

I like my eggs totally plain with a little bit of salt, or sometimes I like them mixed with cheese. But, my husband and my teenagers love omelets chock full of veggies, meat, and cheese.When they are in a rush, I will make them scrambled eggs in a mug with the ingredients I usually put in a omelet. It’s fast to fix and easy for them to take it with them.

If I have frozen chopped veggies, I will quickly add some onions and/or bell peppers. I also add a shake or two of some dried herbs like parsley or cilantro. If we’re out of vegetables, I just toss in some cheddar cheese and salt and pepper. Once it’s ready, they can easily eat it while they’re getting dressed or sometimes in the car if we’re really in a hurry.

What can you add to Scrambled Eggs in a Mug?

You can add all kinds of things to eggs. Making scrambled eggs in a mug is a great way to use up leftovers like rotisserie chicken or ham or even bacon bits. Just shredd it and mix it up into the eggs.

If you keep a bag of frozen veggies, they are also great to mix in. Or, if you have chunky salsa in the fridge, that’s a great addition, too. It adds a little kick to your breakfast. You can even heat up a tortilla and fill it with the cooked scrambled eggs from your mug – that’s a great way to take it on the go so you don’t have to carry the mug with you.

Scrambled eggs are a great way to experiment and see what tastes great mixed in with your eggs. You might find a delicious combination you’d never expect.

Just make sure you don’t fill the mug more than halfway with ingredients before microwaving. You do not want an overflowing mug of eggs in the microwave. That is no fun to clean up.

Prep Time: 1 minute

Cook Time: 1 minute 30 seconds

Total Time: 2 minutes 30 seconds

You can make regular scrambled eggs, cheesy scrambled eggs, and even an omelet in a mug!

Ingredients

  • 2 eggs
  • 1 tablespoon of milk or water
  • Optional: 1 tablespoon of shredded cheese
  • Optional: vegetables (1/8 to 1/4 cup of veggies)
  • pinch of salt
  • pinch of pepper

Instructions

  1. Beat two eggs in a 12 oz microwave-safe mug.
  2. Add a tablespoon of milk or water and mix.
  3. Add the cheese and veggies if you like.
  4. Cook for 30 seconds and stir.
  5. Cook for 30 seconds more and stir.
  6. Cook for the last 30 seconds. If it still looks runny, cook an additional 15 seconds.
  7. Add a pinch of salt and pepper and eat.

Notes

These are really easy to make your own. Add all kinds of shredded cheese from cheddar to jack cheese.

For veggies you can keep a frozen bag of veggies like onions and peppers and add. Or you can add fresh veggies such as diced tomatoes, peppers, onions, parsley,etc.
